I love any dish which is naturally sweeten with natural sugar.. Fruit based dishes fit the bill very well. I am a fan of Jackfruits I saw this recipe in one of the cookbooks sometime ago.. I got some jackfruit other day for our evening fruit snack but we went out. I remembered this recipe. So I made this and I didn’t add any additional sugar as sweetness from Jackfruit was good enough. If you prefer you can add sugar or jaggery. I have used paniyaram pan if you prefer to deep fry you can do so
Ingredients:
Wheat flour – 1 cup
Jackfruit – 6-7 (medium size, ~1.5 cup)
Coconut – 1/2 cup
Coconut bits – 1 teaspoon
Sugar/ Jaggery – 1/4 cup (I didn’t add)
Oil for cooking the appam
Cardamom Powder – 1/4 teaspoon
baking soda – a pinch
Salt a pinch
Method:
Grind the jackfruit with coconut with 1/2 cup of water.
Add all the ingredients except oil in a bowl. Add grinded jackfruit and required water. Mix well without any lumps. Leave it aside for 1 hr
Heat paniyaram pan and add 1/2 teaspoon of oil in each shallow and pour batter (3/4th) in each shallow.
Let it cook in medium low flame till golden brown and turn it over and cook again
Remove it and serve hot
