In our family we all love Orange pumpkin. Making pumpkin sambar every week is a must. My kids love it esp with idli. I had some left over after the pumpkin Sambar. I have decided to use it for making paratha. It came out very soft and tasty. With the natural sweetness of pumpkin and rest of the spices it tasted really good
Ingredients
Cooked Pumpkin – 1 Cup.
Salt to taste
Wheat flour – 2.5 cup
Red chilli powder – 1 /2 teaspoon
Ajwan or Cumin seeds – 1/2 teaspoon (I have used ajwan)
Finely chopped coriander leaves – 2 tablespoon
Method
Remove the skin of pumpkin, Chop it into smaller pieces and cook it with salt. Mash the Cooked pumpkin (I have used spoon) you can use your blendar / food processor)to do so.
Take wheat flour in a broader vessel. Add mashed pumpkin, Red chilli powder, ajwan. finely chopped coriander leaves. Add water little by little to make a soft dough. Cover it with wet cloth for 30 mins
Heat the pan and when it is hot put the rolled out chapati and sprinkle oil around it. Cook till brown spot appears. Turn it over and cook it on other side.
