I saw this recipe in one of the magazines. It looked amazing with less spices. Also I had some black whole urad dhal in stock for quite sometime. So decided to use that. Rice turned out to be very tasty with the crispy potato and Urad dhal kofta. This rice is a really nice combo of flavours and nutrition. This is a perfect one pot meal for your kids lunch box .. I lost all the step by step pics will update once I am able to do it again
Ingredients:
For Rice:
Basmathi rice – 1 cup
Chilli powder – 1/2 teaspoon
Ghee / oil – 1 teaspoon
Bay leaves – 1
Potato – 1 (slice it thinly)
Oil – 1 tablespoon
Salt to taste
Coriander leaves – 1 tablespoon
For kofta:
Whole gram dhal – 1/2 cup
Mint leaves – 1/4 cup
Coriander leaves – 1/4 cup
Ginger – 1/2 inch
Garlic – 4 Flakes
Garam Masala -1/4 teaspoon
Salt to taste
Green chilies – 2 (finely chopped)
Besan flour / Bengal gram flour as required
Method:
Wash and soak the dhal for 5-6 hrs. Cook it with salt till it is soft. Cook it directly on the flame (don’t pressure cook). Drain the extra water.
Grind it with Mint, coriander leaves, ginger, garlic, green cillies, salt, Garam masala into coarse paste.
Make small flat balls and deep fry them. Keep it aside.
Shallow fry thinly sliced potato. Keep it aside
Wash and soak the rice for 15 mins. Drain the water. Heat ghee and add bay leaves, Chilli powder and yogurt(add yogurt in low flame). Fry for 30 sec. Add Rice and fry for a min. Add 2 cup of water and required salt. Cook it.
Add fried kota, Potato and coriander leaves. Mix well
Serve hot
