My hubby loves coconut flavored dishes. I was getting bored with normal rasam. I had more coconut gratings. I wanted to do something with it. I remembered I had tasted Coconut milk rasam before. So I decided it to give it a try. I made this rasam with home made rasam powder. if you prefer to make the fresh grinded spices you can do so. I love eating tit bits like murukku, mixture soaked in rasam..
Ingredients
Coconut milk – 1 cup
Cooked thuvar dal / toor dhal – 4 tablespoon
Tamarind paste – 1/4 cup (take very small marble size tamarind and make a paste using hot water)
Salt to taste
Turmeric powder – 1/4 teaspoon
tomatoes – 1 (chopped finely)
Garlic – 3 pods (chopped finely)
Rasam powder – 1.5 teaspoon (add more if you prefer)
Oil – 3 teaspoon
Mustard seeds – 1/2 teaspoon
Cumin seeds – 1 teaspoon
Urad dhal – 1 teaspoon
Fenugreek seeds – 1/16 teaspoon
curry leaves – 10-15
Coriander leaves – 2 tablespoon
Red chillies – 2(optional)
Method:
Mash cooked toor dhal. Make the tamarind paste and keep it aside.
Mix in Toor dhal, required water and tamarind water. Add rasam powder, turmeric powder and salt.
Heat the pan with oil. Add mustard seeds let it pop. Add cumin seeds let it crackle. Add urad dhal, fenugreek seeds, curry leaves and red chillies. Fry till brown color. Add garlic. Fry till slight brown color
Add Tomatoes fry till mushy. Add Dhal water. When the bubbles start to appear add coconut milk. Just boil for a min add coriander leaves and switch it off
