Vella Seedai – Sweet Seedai – Gogulashtami recipe – Krishna Jayanthi recipe – Pooja Recipes – Diwali recipes

As I mentioned in previous posts I love jaggery based  sweets. Seedai is one of my favourite both Uppu / savory version and sweet version. But I always had some hesitation to try Seedai because my mum took many attempts to make it right. One of my aunt does it well. So everytime we feel like eating we ask her to make it. Of course making Seedai for a big family is a project. So if you are doing alone do it in small qty 🙂
Ingredients:


Rice flour – 1 cup
Urad dhal – 2 tablespoon
White sesame seeds – 1 teaspoon
Jaggery – 1/2 cup
Grated coconut – 1 tablespoon
Cardamom powder – 1/4 teaspoon



Method:
Dry roast Sesame seeds, grated coconut one by one.

Fry Rice flour and take it in a broad vessel. Fry Urad dhal flour and add to together with rice flour. 

Sieve together urad dhal and rice flour couple of times. Add roasted Sesame seeds, grated coconut mix well.

Add one cup water and jagger and heat it to dissolve the jaggery. Drain to remove the impurity. 

Return the jaggery water and add cardamom powder till boiling point.

Mix in jaggery syrup little by little and make a stiff dough. Leave it aside for 15 mins. Make small balls out of dough. Prepare all the dough before heating oil for frying

Heat the oil in a pan for deep frying. To check the temprature drop small piece of dough it should raise immediately. When oil is hot reduce the flame. Drop few seedai in the oil and stand away from the oil for few mins. (just to play safe). After few mins turn it over and and cook till brown in color. This has to be cooked in low flame otherwise outside will turn brown but inside not cookded properly.

Once drain oil and leave it on tissue paper to drain extra oil. Once cool down store it in air tight containers
