Vegetable Paratha recipe – Healthy paratha recipe – Healthy one pot meal

I love all one pot meals. You don’t have to beg kids to finish their plate and all the dishes. Vegetable paratha is such a recipe. I have mixed the vegetables in making the dough itself. You can make it as a stuffing also. For steps to make the stuffed paratha you can follow recipe from here. You don’t need any side dish for this or serve it with yogurt
Ingredients:


Wheat flour – 3 cup
Mixed vegetables – 3 cups (I have used Beans, Carrot, Cauliflower, Peas)
Grated paneer / soft tofu – 2 tablespoon ( I have used soft tofu)
Salt to taste
Turmeric powder – 1/4 teaspoon
Chilli powder – 1/2 teaspoon
Roasted cumin powder – 1 teaspoon
Coriander leaves – 2 tablespoon (finely chopped)
Oil for cooking paratha



Method:


Cook the vegetables with salt and little water. Mash it. Add turmeric powder, roasted cumin powder, coriander leaves and chilli powder. mix well

Take wheat flour in broader vessel. Add salt, mashed vegetble, Tofu. Make a pliable dough.Close it for 30 mins. Take lemon size ball

Roll into think chapathi / Paratha using flour for dusting. Heat flat pan and add rolled paratha and drizzle oil around it

Let it cook till brown spot appears. turn it over and cook again add oil if required

Remove it and serve hot

    I love any kind of parathas.. and can you believe just now we had cabbage parathas for lunch.. I made with the left over sabzi.
