Coffee Cake – Eggless cake recipe – Eggless coffee cake recipe – No butter, No oil cake recipe

Initially I was planning to make cup cake. I was bit lazy to do so later changed to cake. I wanted to try this coffee cake for a while. I wanted to do something without any oil or butter. I tried once with cream but it didn’t turn out good. So I keep postponing. Later I saw few recipes with greek yogurt and fresh cream .. I decided to try out this combo. I was crossing my finger till it is done. To my surprise it came out so perfect.. Cake was so soft and tasty. It finished within a day

Ingredients


Wheat flour – 1/2 cup
All purpose flour – 1/2 cup
Salt – a pinch
Baking powder – 1/2 teaspoon
Baking soda – 1/2 teaspoon
Greek yogurt – 100g
Full cream – 100 ml
Brown sugar powder – 3/4 cup
Coffee powder – 1 tablespoon


Method:


Shift together wheat flour, all purpose flour, salt, baking powder, baking soda well. At least twice. Keep it aside. In a blender take brown sugar powder, coffee powder, greek yogurt, Full cream

Blend it till it is smooth paste. Transfer that into wide vessel. Add dry ingredients. 

Mix well (don’t over mix it.I have used spoon to do it)Grease the baking dish. 

Pour cake batter into greased baking dish. Pre heat the oven at 180 degree C. Place the baking dish in pre heated microwave and baking for 22-25 mins or till when inserted tooth pick comes out clean. Let it cool down completely

    My cake sunk in the middle and is still in liquid kind of. I used butter in place of Greek yogurt same quantity and added one 1/2 tblspoon of curd. Can that be the cause?

    No it is not due to curd..ur baking powder too old? or u hv added more baking powder? Also pre heating properly is very important. Also frequent opening of the oven while baking can cause this…One last possible reason might be u left mixed batter long time before baking it..
