Pineapple pachadi is a famous Kerala recipe.. Me and my first son love pineapple flavour. Sometimes I do simple yogurt pachadi. This goes well with fried rice or part of full meals. For me I can have this as a simple snack… We get pineapple from different places all through out the year. Pineapple is rich in enzyme and good for health.
Ingredients
Pineapple – 1/2 cup (chopped into 1/2 inch cube. I get the skinned)
Thick yogurt or curd – 1/2 cup ( I use 0 fat greek yogurt) + 1 tablespoon
Honey to taste ( I didn’t add as my pineapple was so sweet)
Salt to taste
Oil – 1/2 teaspoon (I have used coconut)
Mustard seeds – 1/2 teaspoon
Curry leaves – 10
Dry red chilli – 2 (split into 2)
Grind to a paste
Grated Coconut – 3 tbsp
Yogurt – 1 tablespoon
/Jeera powder – 1 teaspoon
Red chilli powder – 1/2 teaspoon
Method:
Grind the ingredients under to grind to paste with little water.
Add pineapple and honey if using.
Now in separate pan add oil. when hot add mustard seeds, let it pop. Add urad dhal, Red chillies and curry leaves. Fry till it is brown in color. Add to the pachadi and mix together
serve chillied
