Kutchi Paneer – Paneer in spinach and Chickpea flour sauce – Simple Paneer recipe – No Onion, Garlic recipe

I got a new office colleague who follows Jain food. Jain food is generally without Onion, Garlic. It is a relatively new cuisine for me. I was talking to her about my blog and asking for special paneer recipe without onion and garlic. She passed me this recipe. At first name attracted me to it. It is really tasty and simple recipe. As part of Shhh Cooking Secretly Challenge Hema Viji of Aromatic Cooking gave me Spinach and Chickpeas flour (Besan flour). So I wanted to try something other than pakoda. I saw this recipe in a note pass down to me from my friend. So here you go with the recipe.. This recipe goes to Shhh Cooking Secretly Challenge
Ingredients:


Paneer – 250g
Spinach packed – 4 cups (Chop them roughly)
Green chilli – 1
Chickpeas flour – 2 tablespoon
Salt to taste
Cumin powder – 1 teaspoon
Coriander powder – 1/2 teaspoon
Turmeric powder – 1/4 teaspoon
Asofetida a pinch
Red chilli powder – 1 teaspoon (adjust to your spice level)
Sugar – 1 teaspoon (optional)
Tomatoes – 2 (Medium. Finely chopped)
Oil – 2 teaspoon



Method:


Roast Chickpeas flour till nice aroma released. Let it cool down. 

Fry paneer in 1 teaspoon of oil. Keep it aside. Heat 1 teaspoon of oil. Add cumin powder, coriander powder, turmeric powder and red chilli powder. Fry for a min.

Add Tomatoes and fry till mushy. Add chopped spinach, salt and 1 green chillies.
Heat rest of the 1/2 teaspoon of oil and add tomatoes cook then till they are mushy. Add chopped spinach, slit green chillies with bit of salt. Let it cook. Switch it off and grind to smooth paste.

Mix in Water with bean flour without any lumps. Add to the Spinach paste and grind it again.
Heat a teaspoon of oil. Add asafoetida and cumin seeds. 


Heat rest of oil and add Asafetida and add grinded paste.  Let it boil till desired consistency. Add Fried Paneer and boil for another 2 mins. Switch it off

Enjoy this with rice / roti
