Kodo Millet Vegetable Pulao | Millet Pulao Reipe | Varagu Arisi Pulao

I have been trying different millet recipes these days. My kids are having their school break and they wanted vegetable pulao for lunch. Instead of using rice I decided to try it out with Kodo Millet (varagu arisi). It came out so well. I have used coconut milk in this recipe however you can replace all with water. I have added more vegetables too. 

Ingredients

Varagu arisi / kodo millet – 1 cups
Coconut milk – 3/4 cup
Water – 2.25 cup (If not using coconut milk add 3 cups of water)
Mixed vegetables – 1.5 cups ( I have used beans, carrot)
Mint Leaves – 1 tablespoon (finely chopped)
Green chillies – 4-5 (adjust to the spice level)
Salt to taste
Pepper powder – 1/2 teaspoon 
Onion – 1 medium
Oil – 2 teaspoon 
Ghee – 1 teaspoon (optional)
Cinnamon – 1 inch
Cloves – 2
Ginger paste – 1/2 teaspoon
Garlic – 1 teaspoon


Method:

Wash and soak Kodo Millet for 15 mins. Drain the water. Keep it aside
Heat the pan and add oil & ghee. Add Cinnamon and cloves. Fry till nice aroma released. Add onion and fry till transparent. Add green chillies and ginger garlic pastes. Continue to fry till nice aroma released

Add vegetables and salt, Mint leaves. Mix well. Fry for 2 mins. Add Water and coconut milk. Let it boil. 

Add Millet and mix well. close the lid and let it cook

After cooked switch it off and add coriander leaves. Mix well. Serve hot
