These days I always replace rice with millet varieties. I find no difference in taste. My kids also love it. I find it keeps me filled for longer. These millets are high in fiber and a healthier option than rice. These days I get millets in Singapore itself. So it makes it easier for me to include in our diet. I have posted Varagu Adai / Kodo Millet pancake in my space before.
Ingredients
Varagu Rice / Kodo Millet – 2 cups
Idli rice – 1 cup
Horse gram / Kollu – 1/2 cup (you can replace it with bengal gram dhal)
Thoor Dal / Thuvar Dhal – 1/2 cup
Moong dal / Split yellow dhal – 2 tablespoon
Urad dhal – 2 tablespoons
Curry Leaves – 10-15
Cumin seeds – 1 teaspoon
Grated Coconut – 1/4 cup (optional)
Red chillies – 10 (adjust to your spice level)
Salt to taste
Asafoetida – 2 Pinch or 1/8 teaspoon
Onion – 1 (chopped finely)
Coriander leaves – 1 tablespoon (finely chopped)
Oil for cooking Ada
Method:
Wash and soak Kodo Millet, Idli rice, Horse gram, thoor dal, urad dhal together for 6 to 8 hours.
Drain the water. Grind it coarsely with coconut, Asafoetida, Red chillies, cumin seeds, salt with required water.
Mix in Onion, curry leaves and coriander leaves and mix well. Heat flat pan and pour laddle full of batter and spread it. Drizzle 1/4 oil around it. Cook it well. And flip it over and cook well. (missing rest the of pics.. will update later)
Serve hot with favourite side dish
