Crispy Okra fry – Crispy vendakkai fry – Crispy Bhindi Fry – Crispy vendakkai varuval

My kids love crisp vegetable fry. Normally I buy Indian I saw this nice local produced Ladies finger at local store. So Brought it. The ladies finger is really very nice and tasted great. Even though I made this for lunch by lunch time everything disappeared. Kids loved it and really simple to make. So this can be served as an evening after school snack also. 

Ingredients:


Okra / Ladies finger / Bhindi /Vendakkai – 250 gms / 1/4 kg
Corn flour – 1 tablespoon
Besan flour / Chickpeas flour / chana flour – 1 tablespoon
Rice flour – 3 tablespoon
Red chilli powder – 1 teaspoon
Asafoetida- a pinch
Coriander powder – 1/2 teaspoon
Turmeric powder – 1/8 teaspoon
Salt – as per taste
Oil for frying
Buttermilk – 3 tablespoon + Water as required

Method
Wash and pat dry the ladies finger. slice them into 1/4 inch pieces. in a broad vessel mix in corn flour, rice flour, besan flour, red chilli powder, asafoetida, coriander powder, salt, turmeric powder and yogurt mix well. Add sliced ladies finger and mix it gently without breaking it. Add 1 tablespoon of water if required. the Mixture shouldn’t be too watery. It should like what you see in the pic
Heat the pan and add oil for deep fry. When the oil is hot reduce the flame to medium and add one patch of ladies finger into it. Make sure ladies fingers are separated into single layer. 
Turn then and fry till all sides are in gloden brown or till “Shhhh” sound subside and no more bubbles in the oil. Drain it and place on kitchen tissue paper to drain extra oil
Serve hot
