Thai Green curry vegetable fried rice – Lunch Recipe – Tasty one pot meal

My kids recently started to like Thai food. I am a big fan of Thai cuisine.. This rice is very aromatic & you can have the rice by itself it doesn’t require any side. It is perfect for a lazy weekend or party. I had replaced 1/2 of the coconut milk with 1/2 cup soya milk. If you prefer to have full coconut milk pls go ahead. You can also swap the vegetables given in this recipe with your favourite vegetables. I have made the curry paste same as in my Thai Green Curry Recipe

Ingredients


For Green curry paste:
Lemon grass – 1 stalk
Ginger (Galangal / Blue ginger) – 1.5 inch
Garlic – 5 -7 pods
Coriander roots – from 4 
Coriander leaves – 1/4 cup (finely chopped)
Small onion – 5
Basil leaves – 1/4 cup
Cumin seeds – 1 teaspoon
Black pepper – 1 teaspoon
Green chillies – 3
Lime Leaves – 4


For Rice


Long grain rice – 1 cup ( I have used Basmati)
Coconut milk – 1 cup (or 1/2 cup coconut milk and 1/2 cup soya milk)
Salt to taste
Soya sauce – 2 teaspoon
Mixed vegetables – 2 cups ( I have used broccoli, baby corn, yellow, red and green bell peppers)
Oil – 1 teaspoon



Method:
Wash and soak the rice for 15 mins. Drain it and keep it aside.

Grind all the ingredients under curry paste section with little water into thick smooth paste. Keep it aside

Heat the kada and add oil. Add grinded paste and fry till nice aroma comes. Now add Soya sauce and salt. Fry for another min. Add mixed vegetables. And fry for another 2 mins. Add soya milk (if using), coconut milk and 1 cup of water. Add salt. Let it boil. Now add drained rice and mix well. 

Close the lid and let the rice cook. Add Spring Onion and mix well

Once cooked serve hot

    green or red curry is one of my quick curries to make on certain days. your one pot recipe looks interesting. thanks veena for commenting on the blog, even if i do not have the time to do the same. appreciate 🙂
