Raita / Pachadi is one of simple way you can include vegetable and cook up healthy side dish for fried rice or paratha or stuffed roti in no time. Sometime making another vegetable base gravy or poriyal can be very heavy. Those days Raita / pachadi / yogurt based salad is go to recipe for me. Luckily my family loves it too. This can so simple that even beginners or bachelors can do this
Ingredients
Yogurt – 2 cup (I have used Greek yogurt)
Capsicum – 3/4 cup ( slice into your fav size. Also mix in any color of Capsicum. I have used Green and Red)
Salt to taste
Oil – 1 teaspoon
Mustard seeds – 1/4 teaspoon
Urad dhal – 1 teaspoon
Bengal gram dhal / split chana dhal – 1 teaspoon
Curry leaves – 10
Coriander leaves – 1 tablespoon (finely chopped)
Cumin seeds powder – 1 teaspoon
Chilli powder – 1/4 teaspoon
Method:
Whip the yogurt with cumin seeds powder, chilli powder and salt.
Heat the oil and add mustard seeds let it pop. Add urad dhal, bengal gram dhal, curry leaves and fry till dhal is brown in color. Add chopped capsicum and fry till capsicum is cooked. Switch it off
Add whipped yogurt mix well. Add coriander leaves mix well
Serve with rice, roti, stuffed roti, stuffed paratha
