This is one of our family Okra recipes. I am surprised till this long I didn’t post this recipe. Even though I do this more often everytime I assumed it is already on my space and didn’t even bother to check. A month ago I was browsing my site for Ladies finger recipe and then I realized that this is not there. Interesting. Anyway next time when I did it I took the pics. This recipe is from one of cookbook but overtime I made changes to it. What I share here is my modified version
Ingredients:
Ladies Finger – 300 g
Onion – 2
Tomatoes – 1
Poppy seeds – 2 teaspoon
Cumin powder – 1/2 teaspoon
Coriander powder – 1.5 teaspoon
Turmeric powder – 1/4 teaspoon
Subji masala / kitchen masala – 1 teaspoon
Dry red chillies – 3 to 4 (adjust to your spice level)
Green chillies – 2 to 3 ( adjust to your spice level)
Oil – 2 tablespoon
Curd – 1 cup
Curry leaves – 10
Coriander leaves – 1 tablespoon (finely chopped)
Cumin seeds – 1 teaspoon
Method
Wash and pat dry ladies finger. Cut it into 1.5 inch pieces. Heat the pan and add 1 tablespoon. When hot add ladies finger and fry till they are crisp. Keep it aside
Dry roast poppy seeds. Keep it aside. Heat 2 teaspoon of oil in same pan. And add Onion, red chillies, green chillies and fry till transparent. Add tomaotes and fry till mushy. Add Subji masala, coriander powder, cumin powder, Turmeric powder. Fry for another 2 mins. Switch off the flame and let it cool down. Grind to smooth paste with poppy seeds.
Heat rest of the oil in the pan. Add curry leaves and cumin seeds. Let it crackle. Add grinded paste and fry for 30 sec. Add Whipped curd, required water and mix well. Now add fried ladies finger. Mix well. Let it cook for 2 mins. Switch it off and garnish it with coriander leaves
Serve hot
