Betal leaves rice – Vetrilai sadham – Healthy lunch recipe – Healthy one pot meal

This new recipe I learned after started blogging. Before this I never used betal leaves in cooking. I was bit worried when I first tried. but came out good. After that I made this few times. This is also very healthy. I have followed recipe from 7aum suvai. When Shanthi posted the recipe I was attracted by the pics of it. Now over to the recipe
Ingredients


Basmati rice / long grain rice – 1 cup
Betel leaves – 3 or 4
Garlic – 1 tablespoon finely chopped and 4 cloves sliced into 2 or 3 pieces
Turmeric powder – 1/4 teaspoon
Salt to taste
Sesame oil (gingerly oil) – 1.5 tablespoon
Mustard seeds – 1/4 teaspoon
Urad dhal – 1 teaspoon
Curry leaves – 10
Cinnamon – 1 inch
Clove – 2
Star masala – 1
Bay leaves – 1


For Masala powder


Fennel seeds – 1/4 teaspoon
Sesame seeds – 1 teaspoon
Pepper corns – 1/4 teaspoon
Red chillies – 2 (adjust to your spice level)
Dry ginger powder or sukku – 1 inch
Peanut powder – 2 tablespoon



Method


Cook the basmati rice and spread it in broader vessel. Keep it aside.
Dry roast Fennel seeds, sesame seeds, pepper corn, red chilles, sukku and grind to fine powder together with peanut powder. Keep it aside

Heat the pan with oil Add mustard seeds, curry leaves and all the masala items (bay leaf, cloves, star masala, cinnamon) fry till nice aroma released. Add garlic and fry till it is slightly brown in color. Add turmeric powder, masala powder, chopped betal leaves and mix well. Now add rice and mix well too. Cook for another 2 mins. Add coriander leaves & switch it off. 

Serve hot
