Corn Sundal – Corn salad – healthy snack recipe – Pooja recipes – naivedyam recipes – vinayagar chaturthi recipes

This Sweet corn sundal is so simple and tasty recipe. You can do this when you feel like having. It doesn’t really require much preparation time. It is perfect healthy evening snack. I have used frozen corn you can use fresh corn too
Ingredients:


Corn Kernels – 1.5 cups
Grated carrot – 2 tablespoons
Grated Coconut – 2 tablespoons
Green Capsicum – 3 tablespoons
Curry leaves – 5
Oil – 1/2 teaspoon
Mustard seeds – 1/4 teaspoon
Urad dhal – 1 teaspoon
Green chillies – 2 to 3 (slit into 2)
Salt to taste



Method:


Cook the corn and drain the extra water. Heat the pan and add oil. When it is hot add mustard seeds and let it pop. When start to pop add urad dhal, Green chillies and curry leaves. Fry till it is brown in color. Add Capsicum and fry for a min. Add grated carrot and coconut fry for 30 sec. Add cooked corn and mix well. Fry for another min

Switch it off and serve hot
