I always look for healthy dish for our weekend breakfast or brunch. Since we have bread for almost all weekdays I prefer to do something without bread for the weekend. Pancake, waffles, Wrap are my natural option. I was given Quinoa and cabbage as secret ingredients for Aug 2014 Shhhhh Cooking Secretly Challenge. So I have decided do savory Quinoa Chickpeas cabbage pancake. It is really a good healthy dish to start the day. This post goes to
Ingredients:
Gram flour / Besan /
bengal gram flour / chickpeas flour – 1.5 cups
bengal gram flour / chickpeas flour – 1.5 cups
Rice flour – 1/2 cup
Cooked Quinoa – 1 cup ( In this recipe I have used Red Quinoa)
Cabbage, grated – 1 cup
Coriander Leaves – 2 tablespoon (finely chopped)
Ginger garlic paste – 1/2 teaspoon
Cumin powder – 1 teaspoon
Red chilli powder – 1/2 teaspoon
Turmeric powder – 1/4 teaspoon
Onion – 1 (finely chopped)
Baking soda – a pinch
Salt to taste
Oil to cook the besan pancake + 1 teaspoon of oil
Heat the pan and add a teaspoon of oil. When it is hot add Onion, Ginger Garlic paste and fry till transparent. Add chopped Cabbage, cumin seeds powder, red chilli powder and salt. Fry till Cabbage is 3/4 cooked. Add chopped coriander and mix well. Switch off the flame
Take a large bowl and add all the ingredients mix well. Add water and make nice smooth batter without any lump.
Heat flat pan when it is hot pour and spread little. Drizzle oil around it. Close it with lid and And cook well. Turn it to other side and cook other side also
