My husband loves Kesari. I Love to try different variations. Normally I add sugar to make kesari. But in one of the cookery show I saw Kesari made with Jaggery. I wanted to try. Jaggery kesari tastes well with Wheat Rava kesari. I am not a big fan of non milk sweets but this one is really amazing you should try for sure. I think jaggery and wheat combo always works well (at least for me).
Ingredients
Wheat Rava – 1 cup
Water – 3 cups
Jaggery – 1.25 to 1.5 Cup (adjust to your sweet level)
Salt a pinch
Cardamom powder – 1/2 teaspoon
Cashew nuts – 1 tablespoon (split into half)
Raisins – 1/2 teaspoon ( I didn’t add as my kids are not big fan of it also I ran out..)
Ghee – 2 tablespoon
Method
Melt jaggery with 3/4 cup of water and remove any impurities. Keep it aside. Fry Cashews & raisins in a teaspoon of ghee till brown color. If using Raisin first add cashews and fry till slight brown and then add raisin. Keep it aside
Heat 1 tablespoon of ghee and add wheat rava and fry till nice aroma comes.
Add water and salt. Cook it with lid closed. Once cooked add jaggery and cook till the mixture is thick. Now add cardamom powder and fried Cashews, raisins. Mix well. Switch it off
This can be served hot or cold
