My kids love cookies. Other day my son was asking for cookies. I wanted to try something with almond meal. My son wanted something with Chocolate. So I had decided to try this pinwheel. to make it interesting I had added peanut powder. It came out extremely well
Ingredients
Butter – 110g ( I have used salted butter. if you are using unsalted add pinch of salt when you beat butter and sugar)
Icing Sugar – 1/2 cup
Baking powder – 1/2 teaspoon
All purpose flour – 1.5 cup
Almond meal – 100 g
Peanut powder – 2 tablespoon
Semi chocolate chips – 1/4 cup
Vanilla extract – 1 teaspoon
Method:
Thaw the butter to room temperature. Beat the soften butter, salt if using and sugar together. Add vanilla extract and baking powder till fluffy. Add flour and mix well. Add almond meal and mix well.
Divide the dough into 2 equal parts. Melt the chocolate chips by keeping 30 sec in microwave. Stir in between every 10 sec. Increase another 10 sec if required. This time might vary based on power of microwave. Mix this with one portion of dough and keep it aside
Clean the work space and spread one parchment sheet. Take plain dough and press it on the sheet. Keep another sheet on the top and roll the dough into 1/2 inch dough. Keep it aside. Take another sheet and do the same thing for chocolate dough. Now sprinkle peanut powder on white dough. Place the chocoloate dough on top of white dough. Now roll the dough into log shape. Keep this in fridge for 20 mins.
Once done slice them into 1/4 inch disc / cookies. Place it on the baking sheet. Preheat the oven at 180 degree C. Bake it for 14 mins or till cookies are light brown color. Cool down completely
Store it in air tight container enjoy it.
