I love ginger and Mango. May be that’s why when I tasted in at my cousin’s house I fell in love with it. I have asked my mum to make pickle with it.After making we left with few pieces of the mango ginger. So I asked my mum to do rice with it. However she was not sure about recipe. So I asked my MIL and she told me to do similar to lemon and add mango ginger to it. Why not? result was so tasty and tangy rice
Ingredients
Cooked rice – 1.5 cups ( I have used brown)
Mango ginger / Inji – 4 tablespoon (grated or chopped finely)
Onion – 1/2 medium (sliced thinly)
Green chillies – 3 (adjust to your spice level)
Salt to taste
Roasted Peanuts – 1/4 cup
Grated coconut – 2 tablespoon
Lemon Juice – 2 tablespoon
Mustard seeds – 1/4 teaspoon
Urad dhal / dal – 1.5 teaspoon
Bengal gram dhal / dal – 1.5 teaspoon
Curry Leaves – 10
Oil – 1 teaspoon
Turmeric powder – 1/4 teaspoon
Method:
Heat the kada and add oil. When it is hot add mustard seeds and let it pop. Add Urad dhal and bengal gram dhal. Fry till it is brown in color. Add curry leaves and onion. Fry till onion is transparent. Add turmeric powder, Salt, Maa inji and fry for another 2 mins. Ad lemon juice and cook for another 2-3 mins. Add coconut and fry for 30 sec. Add cooked rice and mix well. Cook for another 2 mins
Switch off and serve hot
