Quinoa asparagus salad – Simple starter recipe – Healthy salad recipe

I love Quinoa.. It is a so versatile grain and you can literally do starter, main course or dessert. It is also perfect dieters. I normally have at least 2 meals with Quinoa per week. It is really high in protein and fiber. For this I have tried toasting Quinoa it tasted really awesome! Enjoy this tasty and simple salad
Ingredients


Quinoa – 3/4 cup
Asparagus – 200g
Baby spinach leaves – 1 cup
Cherry Tomatoes – 5
Onion – 2 tablespoon
Oil – 1 teaspoon


For Salad dressing
Lemon – 2 teaspoon
Mustard paste – 1/2 teaspoon
Salt to taste
Pepper – 1/2 teaspoon
Olive oil – 2 teaspoons
Red pepper flakes – 1/2 teaspoon



Method:


Mix all the ingredients under salad dressing and keep it aside for 30 mins

Dry roast Quinoa. Wash and rinse. Cook the Quinoa per instruction

Heat the pan and add 1 teaspoon of oil. Add Asparagus and fry till it is cooked. Add Spinach leaves and when the leaves start to wilt switch off the flame. Add Onion, Tomatoes. Mix well. Now add Quinoa and salad dressing. Mix well. Let it sit for 30 mins

Serve this refreshing salad
