Tawa Vegetable pulav – tawa pulao – Simple and fast lunch box recipe – Simple rice recipe – Simple one pot meal

I wanted to post this Tawa pulao for quite sometime. It is so simple and fast recipe. My mum used to do it but never know it is called Tawa pulao. We just called it as fried rice. She always try with different masala to give different flavour. 
Ingredients:


Onion – 1/2 cup (chopped finely)
Tomatoes – 2 (chopped finely)
Garlic – 3-4 pods
Ginger – 1 inch
Cooked basmati rice – 3 cups
Salt to taste
Corainder leaves / Cilantro – 1 tablespoon
Oil – 3 teaspoon
Lemon juice – 1 teaspoon
Pav Bhaji masala – 2 teaspoon
Turmeric powder – 1/4 teaspoon
Green chillies – 2 (chopped finely)
Red chilli powder – 1/2 teaspoon
Cumin seeds – 1 teaspoon
Mixed vegetables – 2 cups ( I have used beans, carrot, Cauliflower)



Method:


Heat 2 teaspoon of oil. Add ginger garlic and fry till they are brown in color. Add onion and fry till transparent. Add tomatoes, green chillies and fry till mushy. Add turmeric powder, Pav Bhaji masala, red chilli powder and bit of salt. Fry till nice aroma comes. Switch off the flame and let it cool down. Grind it to smooth paste with 1/4 cup of water

Heat rest of the oil in the pan. Add cumin seeds let it crackle. Add beans, carrot and 1/4 cup of water and salt. Let it cook for 3 mins. Now add Cauliflower..You can cook it with lid closed for another 3 more mins. Add in grinded paste. Mix well. Cook it till the paste is thick. Now add in Cooked rice. Mix well. Check for salt and add if required. Cook the rice for couple of more mins. Switch off the flame. Add lemon juice, coriander leaves and mix well.

Serve hot with your favourite raita
