Raita is simple dish which can be made in no time. It is also quite versatile and goes well with lot of dishes. Perfect for lazy weekend. It is healthy too. I can have this as simple snack. This can be pre done for party / gathering
Ingredients:
Carrot – 1/2 cup (Grated)
Yogurt – 1 cup
coriander leaves – 1 tablespoon (finely chopped)
Mustard seeds – 1/4 teaspoon
Urad dhal – 1 teaspoon
Green chillies – 1-2 (adjust to your spice level)
Cumin seeds – 1/2 teaspoon
Chat masala – 1/4 teaspoon
Salt to taste
Turmeric powder – a pinch
Ginger – 1/4 inch (finely chopped)
Oil – 1 teaspoon
Curry leaves – 10
Asafotedia / hing – a pinch
Salt to taste
Method:
Heat the oil in a pan and add mustard seeds. Let it pop now add curry leaves, cumin seeds, green chillies, Asafotedia and urad dhal. Fry till the dhals are brown in color. Switch it off and Add to grated carrot. Keep it aside
Whip the yogurt with turmeric powder,salt and chat masala now add this to seasoning mix well. Add yogurt to carrot and mix well. Add coriander leaves and mix well
Serve chilled or immediately
