Whenever I make paneer I always reserve the whey water for my soup recipe. Other day I was looking for simple, healthy and filling soup for dinner. I had purple sweet potato so decided to do quinoa soup with vegetables.. I loved the flavour of the soup. I wanted the soup to more colorful (to take care of my color mix) so added mixed vegetable. It is quite filling and refreshing
Ingredients:
Cooked Quinoa – 1 cup ( I have used Red quinoa)
Onion – 1 (chipped finely)
Ginger – 1 inch (chopped finely)
Garlic – 4 pods (Chopped finely)
Mixed Vegetables – 1 cup (I have used Carrot, Purple sweet potato, beans)
Salt to taste
Cumin seeds powder – 1 teaspoon
Green chillies – 3 (adjust to your spice level. Slit into 2)
Whey water – 3 cup
Water – 1 cup
Spring Onion – 2 tablespoon ( finely chopped)
Oil – 1 teaspoon
Method:
Heat the pressure cooker and add oil. When it is hot add ginger and garlic and fry till garlic is brown in color. Add Onion, Green chillies and fry till it is transparent.
Add vegetables fry for a min. Add whey water, water, cumin seeds powder and salt and cook the vegetables. Add Cooked quinoa. Mix well. I have used pressure cooker and cooked for 2 whistle
When it cools down open the lid and add spring onion and let it boil
Serve hot
