Normally I do simple Drumstick Leaves poriyal. Normally I buy one bunch. This time when I bought it i didn’t realize the size was too small. After taking leaves it was really small portion. Not enough for Poriyal. So have decided to do sambar.
Ingredients
Cooked dhal – 1.5 cups
black vadavam – 1 teaspoon
onion – 1
tamarind paste – 1/4 cup (thick one)
oil – 1 tablespoon
small onion-10 (chip finely)
Red chillies – 2
Oil – 3 teaspoon
Turmeric powder – 1/4 teaspoon
Cumin powder – 1/2 teaspoon
Sambar powder – 2 teaspoons (adjust it based on your and your sambar podi spice level)
Salt per taste
Method:
In a kada add oil and when it is hot add black vadavam, red chillies and curry leaves. Fry for 1 min. Add garlic and fry till they are brown in color. Add onion and fry till they are soft. Add drum stick leaves. Fry for 1 min. Add turmeric powder, sambar powder, salt and cumin powder. Mix well. Add Tamarind and let it boil for 2 mins. Add cooked thuvar dhal and mix it well. Close the lid and cook it for 1-2 whistle.

this sounds really interesting… we normally make a coconut based curry with these leaves, not tried them in sambar…
