Beetroot Raita – Beetroot pachadi – Beetroot in yogurt sauce – Simple side dish for fried rice, parathas, roti

As I promised in my previous post here comes yet another simple, healthy yet very tasty raita. This is perfect side dish for fried rice, biriyani, Roti, Parathas. I find this combo of beet and yogurt really works. My son claims this is even better than beetroot chutney. So try it out.
Ingredients:


Beetroot – 1 (medium size. When grated about 1.5 cups)
Green chillies – 3 to 5 (adjust to your spice level)
Cashewnuts – 10 (Soak it in hot water for 15 mins)
Fresh grated coconut – 2 tablespoon
Yogurt -3 cups

To Temper

Oil – 1/2 teaspoon
Mustard seeds – 1/4 teaspoon
Urad dhal – 1 teaspoon
Curry leaves – 10



Method:


Grind green chillies, cashew and grated coconut. Add yogurt and whip it. Add 1/2 teaspoon of oil in a pan and when it is hot add mustard seeds. Let it pop. Add Urad dhal, curry leaves. Fry till dhal is brown in colour. Add Grated Beet and fry for 2-3 mins till raw smell goes off. Add whipped yogurt and mix well

Serve with your favourite main dish.

    loved the 3 plates colour combination u used here.Beetroot oh give me in any form…Raita oh so much needed in heat

    beetroot and me don't go together…but this pachadi looks so creamy and rich that it definitely left me tempting
