Eggless Wheat Coconut Cookies Recipe

Cookies! my second son is very big fan of cookies. During holidays around morning 11 AM he will always look for biscuit break. He is allergic to egg. So if I bake some cookies at home I try to make it healthier and egg free. My family is always big fan of coconut. So I have decided to try out wheat coconut cookies. I have followed recipe from here

Ingredients:


Wheat flour – 1 cup
Sugar – 1/2 Cup
Butter – 1/2 cup
Vanilla essence – 1 teaspoon
Milk – 1 Tablespoon (or as needed)
Unsweetened Desiccated Coconut – 1/2 cup
Salt – A pinch
Unsweetened Desiccated Coconut for garnish as needed
Baking powder – 1 teaspoon



Method:


Powder sugar in the mixie / food processor / blender. Keep it aside



Preheat the oven to 180 degree C.
In a mixing bowl cream together butter and sugar. Add vanilla essence, baking powder and salt and mix well. Add flour and coconut. Mix together and if needed by adding milk little by little make a soft dough.  Divide the dough into 20-25 round balls. 



Press it between plams and arrange it in a baking tray. Leave enough space ~ 1/2 to 3/4 inch space between cookies. Bake the cookies for 18-20 mins or till the sides start to brown. Remove it and let it cool down completely

Store it air tight container and enjoy it
