Cabbage and capsicum (capcicum) cheesy rice

Variety rice is so convenient for weekdays lunch box or lazy weekend brunch. I am very lucky because my entire family is big fan of variety rice. Especially simple flavour ones. This rice is really refreshing with mild spices. This rice is easy to match with any raita or vegetable. I like my rice to be with more vegetables. If you prefer with less increase the amount of Rice by another 1/2 cup
Ingredients:


Cabbage – 1 cup
Capsicum – 1/2 cup
Peas – 1/4 cup (optional)
Cooked Long grain rice / basmati rice – 2 cup
Pepper Powder – 1 teaspoon
Onion – 1
Coriander leaves / cilantro – 2 tablespoon
Cheese – 1/4 cup
Salt to taste
Olive oil / sunflower oil – 2 teaspoon

Method:
Spread the cooked rice in a plate. Keep it aside.
Heat the kada / pan and add oil. When it is hot add onion and saute till they are soft. Add Capsicum, Cabbage and peas (If using) and fry for another 5 mins. Add pepper powder, Salt and mix well. Add cooked rice mix well. Add Cheese and coriander leaves and mix well.

Switch it off and serve hot

    This variety of rice dish is tempting.. Can imagine the flavors imparted by Bell peppers and cabbage, along with that cheese! Wow.. Heavenly it would be!
