Dum Aloo

Whenever I buy baby potato I end up doing fry with it. Aloo Dum is something I wanted to try for long time. I finally managed to do it. I didn’t get the nice color as you see it restaurant as I have used fresh tomatoes. If you use tomato puree you will get the color. Regardless I find the taste is not compromised.
Ingredients

Baby Potatoes – 15 small ones
Tomatoes – 3
Pepper – 3-5
Cashew nuts – 10
Red chilli powder – 1 teaspoon (Adjust it to your taste)
Subji masala – 1 teaspoon
Fennel powder – 1/4 teaspoon
Coriander powder – 1/2 teaspoon
Coriander leaves – 1 tablespoon (finely chopped)
Oil – 2 tablespoon
Salt to taste
Yogurt – 1 cup
Poppy seeds – 1/2 teaspoon

Method:

Peel the potatoes and make holes using fork. And immerse them in the salted hot water for 30 mins. Heat the kada and add 1.5 tablespoon of oil. Shallow fry the potatoes till sides are crisp. Keep it aside
Soak cashew and poppy seeds for 30 mins in water. Heat the kada and add tomatoes fry them till mushy. Add all the masala powder and fry till raw smell goes off. Switch it off let it cool down. Grind it together with cashew, poppy seeds to smooth paste. Whip the yogurt and keep it aside
Heat the kada/pan and add rest of the oil. Add grinded paste. Fry for another 2 mins. Add fried potatoes and mix well. Let it cook for another 3-4 mins. Add whipped yogurt and mix well. Cook for another 5 mins. Switch it off and add coriander leaves
Serve hot with chapathi / roti / rice

    Just like you, I have the habit of stir frying potatoes. So this recipe is something I shall try because its needed as a change, what more its fabulous to look at and really tempting,
