coconut burfi – Simple diwali / deepavali sweet

This is one dish I have done many times (even my kids were asking why I keep doing as normally they don’t get to eat dishes that often as I try new stuff for our post) for one reason or other I couldn’t take snaps. So everytime I do with the hope I can take snap. This is my 2nd son and my husband favourite. They love the bounty chocolate
Ingredients:


Coconut – 1.5 cups
Ghee – 2 tablespoon
Cashewnuts – 1 tablespoon (broken into small pieces)
Sugar – 1/2 cups (Adjust the sugar if u need more sweeter)
cardamom powder – 1/8 teaspoon



Method:


Heat the pan and add ghee. Grease the plate and keep it aside. When it is hot add broken cashew and fry till it is drain and brown keep it aside. keep the extra ghee in the pan. Add grated coconut and fry till moisture is absorbed. Add sugar and continue to stir till the mixture is not sticky to pan and bubbles start to appear add cardamom powder, cashew nuts and mix well. Pour the mixture to greased plate and level it with flat laddle or spoon. Using sharp knife and cut into pieces when the mixture is warm. When it is cool down store it in air tight calendar. 

Enjoy! it can last for 5-7 days. Kept in fridge it can last for 10 -14 days
