Pumpkin Halwa / Pumpkin with Coconut milk dessert

I love vegetable / fruit based desserts. It is one way of including vegetables as part of the meal and it normally requires less sugar to sweeten up. Pumpkin is one of our family favourite vegetable. They love almost every dish. I wanted to try dessert with it. So here you go with Halwa recipe.. It is very tasty difficult to stop with just one spoon
Ingredients:
Red Pumpkin – 3 cups (grated)
Sugar – 1 to 2 cups ( I have used brown also my pumpkin was bit sweeter so I have used only 1 cup)
Condensed milk – 1 tablespoon (Optional. I have used low fat one)
Cashewnuts – 1 tablespoon
Baked Almonds – 10 -15 chopped
Elachi / Cardamom powder – 1/4 teaspoon
Ghee – 2 tablespoon
Coconut milk – 2 cups



Method:
Powder cashewnuts and keep it aside

Grate Pumpkin and heat the pressure cooker. Add 1.5 tablespoon of ghee. When it is hot add grated pumpkin. Fry for about 3-4 mins or till nice aroma comes out of. Add coconut milk and let it boil. 

Cook with lid and weight on. I have cooked till 2 whistles. Let it cool down and open the lid. Let it boil in medium flame till the moisture is absorbed. Stir it regularly.  Add in sugar and condense milk. Add in powdered cashew. Mix well. Fry for another 2 mins. Add Cardamom powder and mix well. Fry till the ghee separate from it. Add rest of the ghee and mix well. Add chopped almonds and mix well. Fry for another min. Switch it off 

Serve hot or cold.
