Peanut! What a addictive and versatile ingredient! This is one of the ingredients I must have in all forms and all times. Sundal is a easy / healthy way to include protein in your meal. I normally do it at least twice a week. This recipe is very easy and never go wrong recipe. If you have Peanut at home give it a try you will love it like us
Ingredients
Peanut – 2 cups
Salt to taste
Grated Carrot – 3 tablespoon
Grated Coconut – 2 tablespoon
Mustard seeds – 1/4 teaspoon
Curry leaves – 10-15
Urad dhal – 1 teaspoon
Red dry chillies – 2-3 (adjust to your spice level. Break it into 1 inch pieces)
asafoetida powder / Hing – pinch
Oil – 1 teaspoon
Method:
Wash and soak peanut for 2 hours. Pressure cook or cook with salt and enough water it on stove top till they are cooked (Make sure not mushy). I cook till 3 whistles. Drain the excess water and keep it aside
Heat the kada and add oil. When it is hot add mustard seeds and let it pop. Add Urad dhal, Broken red dry chillies and curry leaves. Fry till urad dhal is brown in color. Add cooked peanut fry till moisture is absorbed. Add Grated carrot and coconut. Mix well.
Serve hot. I bet it will disappear in mins
