Cauliflower and peas rice

This is yet another perfect one pot meal for lunch box or weekend brunch or lunch. It is very simple and tasty rice. I have used bisibelabath masala in this rice. With the addition of Mint leaves it really tasted good. Everyone loved the flavour of this rice. Enjoy it
Ingredients


Cauliflower – 2 cup (flowerlets) 
Onion – 1/2 sliced thinly
Tomatoes – 2 chopped finely
Green chillies – 3 slit into 2
Small onion – 10
Ginger garlic paste – 1 teaspoon
bisibelabath powder – 1.5 teaspoon
Sugar – 1 teaspoon (optional)
Salt to taste
Mint Leaves – 1 hand ful 
Coriander Leaves – 1 tablespoon finely chopped
Peas – 1/2 cup
Oil – 5 teaspoon
Bastmati rice – 1 cup

Method:
Wash and soak the rice for 10 mins. Drain the water. Add 1/2 teaspoon of oil in the kada and fry the rice till moisture is absorbed. Keep it aside
Heat kada and add 2 teaspoon of oil. When it is hot add small onion, green chillies and fry till onion is soft. Add tomatoes and fry till they are mushy. Add teaspoon of chopped coriander leaves. Add bisibelabath powder and fry for another 2 mins. Switch it off and let it cool down. Grind it to a smooth paste

Heat the rest of the oil add cumin seeds. When it start to crackle add thinly sliced onion and fry till transparent. Add grinded paste. Fry for another 2 mins. Add 2 cups of water and salt. Mix well. When it start to boil add Cauliflower and mint leaves. When it boiling add rice and mix well. Add peas also. Mix well. Close the lid and let it cook. Stir in between. Once rice is cooked add coriander leaves and mix well. 

Switch it off and serve hot
