I had some left over chutneys in the fridge after doing Pani puri last week. I wanted to do some chat items. However I wanted something more on healthier side (without deep fry). After long time I brought the white peas. It was sitting in the fridge without opening. So the choice is very clear yes Ragada Patties. Before soaking white peas I wanted to make sure I had all the ingredients. Yes! I had. So here you go with delicious irresistible snack. It is can be a meal by itself
Ingredients:
For Aloo Tikkis
Potato – 4 Medium size (When you mash enough for 1.5 to 2 cups)
Coriander leaves – 1 tablespoon
Mint Leaves – 1/2 tablespoon
Red Chili powder – 1/2 to 1 teaspoon (Adjust to your spice level)
Garam Masala – 1/4 teaspoon
Jeera ./ Cumin seeds Powder – 1/2 teaspoon
Corn Flour – 3 teaspoons
Turmeric powder – 1/4 teaspoon
Salt per taste
Oil for frying – 8 Patties
Method:
Wash and Cut the Potatoes into 4 pieces. Pressure cook the Aloo / Potoato with salt till 3 whistle. When it cool down remove the skin and mash it well without any big lumps
Add Coriander leaves, mint leaves, Turmeric powder, corn flour, red chili powder, jeera powder and garam masala, Salt (if needed. remember we have added while cooking the potato so check first before adding) and mix well. Dough should be tight. If not add little more corn flour. Divide the dough into equal 8 balls (lemon size balls). Using plam flatten it. Keep it aside
Heat the flat tawa. When it is hot arrange the tikkies in the tawa, Add oil around each tikki. Cook till both sides are brown in color.
For Ragada Gravy
Ingredients:
White Peas – 1 Cup
Onion – 1 Finely chopped
Tomatoes – 2 Finely chopped
Cumin seeds – 1/2 teaspoon
Oil – 3 teaspoon
Red chili powder – 1/2 teaspoon
Garam masala – 1/2 teaspoon
Coriander seeds powder – 1/2 teaspoon
Turmeric powder – 1/4 teaspoon
Oil – 3 teaspoon
Salt per taste
Ginger Garlic paste – 1 teaspoon
Coriander Leaves – 1 tablespoon (finely chopped)
Method:
Soak White Peas for 6 hours or overnight. Cook it in pressure cooker till 2 whistles ( I have done it till 3 because my son love it with peas fully cooked) with salt and enough water. Switch it off and let it cool down.
Heat the kada with 2 teaspoon and add onion and fry till it is slight brown color. Add tomatoes, Ginger garlic paste and fry till mushy. Switch it off. Once cool down grind to coarse paste.
Heat the kada and add rest of the oil and add cumin seeds. Let it crackle add grinded paste and fry for 1 min. Add all the masala powder (Red chili powder, Coriander Seeds powder, garam masala, turmeric powder) and mix well. Fry for a min or two. Add cooked peas and mix well. And add water to make it to desired consistency. As you stir mash the peas little bit. Let it boil for 3-5 mins.
Garnish with Coriander leaves and Keep it aside
Ragada Patties Assembly:
Ingredients:
Aloo Tikkis – 2
Peas Masala – 1 or 1.5 ladle
Sev – 1-2 tablespoon
Finley chopped onion – 1 teaspoon
Tomato wedges – 1 or 2
Coriander Leaves – 1/2 teaspoon
Green Chutney – 1 to 2 teaspoon
Red Chutney – 1 to 2 teaspoon
Method:
Arrange the Aloo Tikkis in the Plate. Add peas masala on top of it. Add onion, tomato wedges.Put both chutneys on it . Top it off with Sev and coriander leaves
Serve immediately. Adjust the chutneys and sev to your taste.
