Sevai with Mixed vegetable and flax seeds powder

I had some left over rice sevai. I wanted to make something that will go with weekend brunch. I wanted to try with Sesame seed powder and realised I ran out of it. So I was looking for options. I had Flax seeds powder in the fridge ( it was sitting there for a while) so decided to make use of it. Since just using it alone might be pretty bland I have decided to add more vegetables. It came out pretty well. My son asked whether we can make it every time I make idiyappam or sevai

Ingredients:
Idiyappam / Rice noodle – 2.5 cup
Mixed vegetable – 3/4 cup ( I have used beans, carrot and cauliflower)
Flax seeds powder – 2 tablespoon
Salt per taste
Green Chillies – 3 slit into 2
Oil – 1 teaspoon
Onion – 2 teaspoon (finely chopped)
Curry Leaves – 10
Mustard seeds – 1/2 teaspoon
Urad dhal  – 1 teaspoon
Bengal gram dhal – 1 teaspoon
Coriander leaves / cilantro – 1 tablespoon (finely chopped)



Method:


Cut the rice noodle / sevai / iddiyappam into smaller pieces. Keep it aside

Heat the kada and add oil. when it is hot add mustard seeds and let it pop. When it pops add urad and bengal gram dhal. Fry till they are brown color. Add green chillies and curry leaves fry for another 20 sec. Add onion and fry till it is transparent. Add all the vegetable and salt. Sprinkle water and cook the vegetable (you can close the lid). When it is cooked add flax seeds powder and mix well. Add cut sevai and mix well. stir for another 3 mins. 

Switch off and decorate it with Coriander leaves
