Mugalai Pulav

Yet another of our family favorite. This rice is perfect combination of spices, Vegetables and Fruits. Very easy to meet daily severing of veg and fruits. This rice doesn’t require any side dish. This is perfect balanced meal for the kids lunch box. I do this quite often during this season as I get sweet seedless grapes. In my opinion this gives very nice taste to the rice.
Ingredients:


Basmathi Rice – 1 Cup
Mixed Vegetables – 1.5 Cup ( Beans, Carrot and beans. You can add your preferred vegetables)
Diced Fresh Fruits – 1 Cup (Pineapple, Apple and Grapes (seedless))
Oil – 2 tablespoon
Cloves – 2
Cardamoms – 2-3
Cinnamon – 1 Inch
Salt per taste
Bay leaf – 1-2
Cashewnuts – 10-15
Poppy seeds – 1/2 teaspoon
Garlic – 8-10 Pods
Green Chillies – 7-10
Ginger  – 1 inch
Coriander Seeds – 3/4 teaspoon
Oil – 1 teaspoon


Method


Cook the bastmathi rice and spread on wide plate to cool down. 

Dry roast Coriander seeds (Dhania). Remove it add roast Poppy seeds. Soak Poppy seeds in hot water with cashew nut for another 15-20 mins. Add 1/2 teaspoo of oil and fry Garlic, Ginger and Green chillies. Keep it aside to let it cool down. Powder Dhania / Coriander seeds. Add Cashew, Poppy seeds and fried Garlic, ginger and green chillies. Grind to to smooth paste.


Add Rest of the oil in the kada. Add masala items (Cloves, Cardamoms, Cinnamon and bay leaves) Fry for a min. Add all the vegetables and salt. Mix well. Close the lid to cook the vegetables. When it is cooked add grinded masala and fry till moisture absorbed. Add cooked rice and Mix well

Now add Fruits (Add at the time of serving otherwise the color will change). Mix well. 

Serve hot.
