Thai Spicy basil rice – Vegetaraian

Whenever I go to Thai restaurant rice I always look for is Basil rice. It is very flavourful and tasty. Even though I love spicier version,  because of kids I normally reduce the chillies when I do it at home.  This is very simple yet pretty flavourful rice. Perfect for weekend brunch or lunch as you can spend little time in the kitchen yet present very interesting dish.  Thai Basil Vegetarian Fried Rice is a delicious preparation of rice that is made spicy with thai red chillies. You can experiment with you choice of vegetables and egg. Since I normally cook vegan version I didn’t add any egg

Ingredients

2 cups of pre-cooked short grain rice or jasmine sticky rice or Brown rice ( I have used brow rice)
2 tablespoons sesame oil / Gingerly oil
1 teaspoon finely chopped ginger
1 tablespoon finely chopped garlic
1/4 cup chopped spring onions
1/4 cup finely chopped red bell pepper
1/4 cup of finely chopped green bell pepper
1/4 cup of finely choppped carrots
1/4 cup finely chopped beans
4-6 thai red chilies, crushed with seeds (or 2 serrano or green peppers)
1 tablespoon soy sauce
1 cups fresh thai basil, roughly chopped

Method

Heat oil in a kada on high heat; add the ginger, garlic, onions, thai red chillies, peppers, carrots and beans. Sprinkle some salt and stir fry all of them together on high heat until lightly cooked. Take care as vegetables shouldn’t be over cooked

Stir in the soy sauce and stir fry for a couple of more minutes. Add Rice and roughly chopped basil leaves. Continue to fry for few more mins. Switch it off

Serve it hot with a curry or any side dish. Simple onion raita will taste great too.
