Capsicum Fried Rice

This is yet another simple rice which is easy to match with any side dish also very quick to make. I have used  only yellow and green capsicum in this but you can use any combo or just one variety. Even though less spices are used this quite flavourful. I have used grinded paste of small onion, green chillies, ginger and garlic in this recipe. If you prefer you can just saute it. I prefer the grinded paste as it blends with rice nicely
Ingredients:

Bastmati rice – 1 cup (cook it with 2 cups of water and spread it on broader vessel. Each grain should be separate)
Capsicum – sliced thinly (1.5 cups)
Cumin seeds – 1 teaspoon
Curry leaves – 10-15
Oil –  1 teaspoon ( I have used olive oil)
Salt per taste

To grind
Small onion – 10
Garlic – 4-5
Ginger – 1 inch
Green chillies – 2
Oil – 1 teaspoon


Method:

Fry the ingredients under to grind in 1 teaspoon of oil and grind to smooth paste

Heat the kada. Add oil. When it is hot add cumin seeds and when it start to crackle add curry leaves fry for 10 sec. Add Capsicum and fry till they are crisp. Capsicum shouldn’t be over cooked. Add the grinded masala and salt. Mix well. Add the cooked rice an mix well. Fry for another 2-3 mins. 

Serve hot
