Almond / Badam Milk

These days I try to force myself to have milk at least once a day. I prefer to spice up or mix flavour to milk and yogurt. Badam milk or Almond kheer is one of such flavoured milk in which I can tolerate the milk flavour. Rest of my family like it too. This can be served as simple dessert. This is good for health and can be given to kids as part of their balanced meal plan
Ingredients:


Almonds – 30 (raw almonds taste better)
Milk – 3.5 cups ( I have used skim milk)
Sugar – 4 to 6 teaspoons
saffron – 1/4 teaspoon
Cardamom Powder – 1/2 teaspoon



Method:


Warm 1/2 cup of milk and soak Amonds in it for 30 mins. Peel the skin and grind it to a smooth paste. Use  same milk which is used for soaking for grinding. Add the milk little by little to get smooth texture

Warm 2 tablespoon of milk and Soak Saffron in it.

Heat rest of milk and let it boil. When boiling add grinded almond paste and mix well for  20- 30 sec. Add cardamom powder, sugar and saffron. Mix well. And keep stirring it for another 1-2 mins. Make sure you do this in low flame so that milk doesn’t get burnt.

Transfer this to container and let it cool down. I prefer to have it cold and my husband has it hot. So serve per your taste. If you want you can top it off with chopped almonds while serving
