As I stated in few recipes before my kids are big fans of Naan or Kulcha. They have very specific type of Naan or Kulcha. This time I wanted to try Masala Kulcha. But my kids wanted Aloo Kulcha. I have seen recipes in many blogs and it is also called as Amritsari Kulcha. Normally my kids take time in the dinner table but there are some foods they finish in no time. This is one of it. This is good for kids lunch box too
Ingredients
For Dough
All purpose flour / Maida – 4 cups
Yogurt – 4 tablespoon
Warm Milk – 1/4 cup
Baking soda – 1/4 teaspoon
Baking powder – 1/2 teaspoon
Sugar – 2 teaspoon
Water for making dough
Oil for cooking Kulcha
Coriander Leaves – 1 tablespoon (finely chopped. Or required)
nigella seeds – As required (optional)
For Masala
Potato – 2 (medium)
Onion – 1 (finely chopped)
Garlic paste – 3 teaspoon
Ginger paste – 1 teaspoon
Chilli powder – 1/2 teaspoon (Adjust to your spice level)
Roasted cumin powder – 1/2 teaspoon
Amchoor powder – 1/4 teaspoon
Garam masala – 1/2 teaspoon
Turmeric powder – 1/4 teaspoon
Salt to taste
Coriander leaves – 2 tablespoon (finely chopped)
Mint Leaves – 1 tablespoon (finely chopped)
Oil – 3 teaspoon
Method:
For Dough
Sift together maida, Baking powder, baking soda. Take a broader vessel. Add the flour and make a well in the center. Add Yogurt, Salt, Sugar and add Milk. Make a soft, Pliable dough. Close it with wet cloth and leave it aside for 3-4 hrs
Masala
Now time to make masala. Cook the Potato with required salt. Remove the skin and mash it well. Keep it aside
Heat oil in a pan. Add Onion and fry till trans parent. Add Ginger, garlic paste. And fry till raw smell goes off. Add mashed potato,
Add Required salt, Turmeric powder, Red chilli powder. Roasted cumin powder, garam masala powder and Amchoor powder. Mix well. Let it cook completely
Add Chopped coriander leaves, Mint leaves and mix well. Switch it off and let it cool down
For Making Kulcha
Now take the dough and divide them into Orange size dough. Take Potato mixture and make same size balls as dough.
Roll out Maida dough into thick circle disc. Place the stuffing in the middle (as you see in the pic)
Bring all the sides together to close it. Roll out to thick kulcha. Dust it with flour as you roll out
Sprinkle some Nigella seeds and chopped coriander leaves(if using) and roll it out. It will stick to the Kulcha
Heat flat pan and place the kulcha. Spread some oil. Close it with the lid and cook it.
Turn it over and cook again.
Once done remove it from the flame and serve hot
