Andhra Peanut Chutney

Peanut! I am addicted to it.. Any thing I make with it is super hit so far. My kids love peanut chutney with dosa. Normally do simple version of peanut chutney. I wanted spicier version of it. So I made some small modifications to it. It tasted extremely good. It goes well with idli / dosa / rava upma etc..
Ingredients:
Peanut – 1/2 cup
grated Coconut – 1.5 tablespoon
Small Onion – 5
Garlic – 7 pods
Red chillies – 5-8 ( I have used 7)
Oil – 2 teaspoon
Mustard seeds – 1/4 teaspoon
Curry leaves – 10-15
Urad dhal – 1 teaspoon
Tamarind -small marble size
Salt to taste

Method:
Dry roast the peanut and remove the skin ( I had roasted peanut so I don’t have pic for this)
Head the pan and add 1 teaspoon of oil. Add red chillies, Small onion, Garlic. Fry till they are transparent. Add Coconut fry till no moisture. Add roasted peanut. Fry a min. Switch off the flame and let it cool down.

When it is cool down grind to smooth paste with salt and tamarind using blender / food processor or mixer. Heat the small pan and heat rest of the oil. Add mustard seeds let it pop. Add urad dhal and curry leaves and fry till dhal is brown in color. Add it to the grinded chutney run the mixer for another 5 sec.

Serve with Idli, Dosa or upma
