Once in a while if I travel I get my husband to do the weekly marketing. Most of the time I will run out of vegetables towards end of of week. My aunt does this appala kootu and I wanted to post it in my blog for quite some time. For some reason I was never able to do it. Either no light or sometimes the papad I fry disappears in few mins (then it become potato kootu)
Ingredients:
Potato – 2
Onion – 1 medium
Tomato – 2 medium (chopped finely)
Bengal gram dhal / Kadala paruppu / Chana dal – 1/2 cup
Salt to taste
Turmeric powder – 1/4 teaspoon
Green chillies – 2 slit into two
Red chilli powder – 1/2 teaspoon (adjust to your spiciness)
Oil – 2 teaspoon
Mustard seeds – 1/4 teaspoon
Urad dhal- 1 teaspoon
Asafoetida – few pinchs
Curry leaves – 10-15
Fried pappad – 7-8 (crumble into small pieces)
Coriander leaves – 1 tablespoon (finely chopped)
Method:
Cook the potatoes and peel the skin and chop it. Heat the oil in the pan and add mustard seeds and let it pop. Add urad dhal, curry leaves, asafoetida and fry till brown color. Add onion, green chillies and fry till transparent.
Add tomato and fry till mushy. Add turmeric, red chilli powder and salt. Mix well
Add cooked potato, bengal gram dhal and 2 cups of water and close the lid and cook it.
I have done it in pressure cooker till 5 -6 whistles. . Switch it off. When it is ok to open open the lid and add broken papad
Mix well. Add coriander leaves and mix well
