This Kootu is very fast to make and healthy too. This goes well with rice or chapathi or even bread. It is so healthy that you can feed it to your baby/ toddler. I have used Ash gourd but other vegetables like Chayote (Chow Chow), Eggplant (Brinjal), Bottle Gourd, Snake gourd can be used also. This can be good option for dieters as it has dhal and vegetable goodness.
Ingredients:
Ash Gourd – 2 Cup (diced into 1 inch cube)
Pressure cook the vegetables, and moong dhal with turmeric powder and sat till it is cooked ( 2 whistle)
Heat the kada with oil. When Oil is hot add mustard seeds. When it start to pop/crackle add curry leaves, red chillies (if using), Asafoetida fry for 5 sec.
Add cooked vegetables and moong dhal. Add Kootu podi and let it boil to desired consistency
