Asparagus Fried Rice

Other day when I was doing weekly vegetable shopping I saw very tempting asparagus. I was so tempted to buy. So I asked the shop owner about what they do with it. They said they do simple garlic fry or soup or rice. She gave me few recipes. So without hesitation I brought it. I made this asparagus rice. It came out very nice

Ingredients

Cooked white rice or brown rice – 1 cup ( I have used brown rice)
Asparagus – 1.5 cup
Spring onions / green onion – 2 tablespoon finely chopped
Garlic – 3 tablespoon
Green chilli – 2- 3 (slit into 2 and chopped into 1/2 inch pieces)
Chinese 5 spice powder – 1/4 teaspoon
Pepper Powder – 1/4 teapsoon (adjust to your spice level)
Soya Sauce – 1 teaspoon
Salt per taste
Coriander leaves / cliantro – 2 tablespoon (finely chopped)
Olive oil – 3 teaspoon

Method:

Cook the rice and spread it in broader vessel. Keep it aside

Heat the kada and add oil. When it is hot add garlic. Fry till they are slight brown in color. Add sliced asparagus, Salt and cook it till asparagus is cooked. Add chinese 5 spice powder, pepper powder and soya sauce. Fry for another 2-3 mins. Add chopped spring onion and fry for a min. Add cooked rice and mix well. Fry in high flame for 3-5 mins. 

Switch it off. Garnish with coriander leaves and serve hot
