Aubergine Mozzarella bake recipe – Eggplant Mozzarella bake recipe – Snack Recipes – Kids friendly recipe – Party recipes

Eggplant / Aubergine is not the most favoured vegetable at our house hold. I love it so I am still finding something which can tempt my kids to eat it. I saw this cheesy bake in one magazine and later I saw it in Raks space. I have bookmarked it. This can be served as a meal by itself or served as a snack. This dish is very simple and you just need to assemble your ingredients. Very simple recipe to impress your guests` / kids. With this you can create Italian restaurant dinning feel at home! Enjoy! 

Ingredients:


Eggplant / Aubergine – 1 long variety
Salt to taste
Dry mixed herb Italian spice – 1 teaspoon
Red chilli flakes – 1/2 teaspoon (optional)
Olive oil – 1/4 cup
Mozzarella – 1/2 cup to 3/4 cup (I have added more as my kids love cheese)
Pasta Sauce – 5 Tablespoon



Method:


Wash and slice the Eggplant / Brinjal thinly. Add Salt, Oil, Red chilli flakes, Mixed Italian herb mix well. Keep it aside for 30 mins

Line baking tray and arrange Marinated Eggplant in single layer. Grill it in the oven till Eggplant is cooked. Alternatively you can do this on Dosa pan (flat pan) on the flame

Arrange cooked Eggplant, Pasta sauce and cheese in alternate layer in a baking dish.

Finish it with layer of cheese. Leave little space in the dish so that cheese melt will not overflow. Pre heat oven at 190 degree C. Bake the dish at 190 degree for 18-20 mins till top of the dish start to brown
Serve hot
