My family loves pongal with the exception of me. So I do pongal once in a while.. My family is fond of sweet pongal. Last week when I am back from office my kids was asking for pongal it was almost dinner time so I wanted to look for something quick and vegan. When I flip thro’ the recipes collection from my mum/friends I saw this Phoa sweet pongal with coconut milk. So made it without any second thought
Ingredients:
Phoa – 1 cup
Coconut Milk – 1.5 cup
Water – 0.5 cup
Sugar – 1/2 cup (adjust to taste)
Ghee / oil – 2 teaspoon
Cooked Moong dhal – 1/2 cup
Cardamom powder – 1/4 teaspoon
Orange food color – pinch (Optional)
Method:
Heat the pan. Add ghee / oil and fry phoa till it is brown. Soak phoa in coconut milk for 10 mins.
Add water, sugar, cooked dhal, food color (if using) mix well. Put back the pan and in slow flame let it cook and once all moisture is absorbed add nuts. Mix well.
Serve hot.
