Avocado Quinoa

Avocado is healthy. Quinoa is healthy and packed with protein. How about combining these 2. Quinoa has it’s own taste but when combine with different spices or ingredients it taste so different. It blends well with the spices added. This avocado Quinoa so yummy I can have it as starter or as meal itself.
Ingredients:


Avocado – 1/2
Tomatoes – 1 Tablespoon (finely chopped)
Onion – 2 tablespoon (finely chopped)
Pepper powder – 1/2 teaspoon
Green Chillies – 1 or 2 (Finely chopped)
Salt per taste
Ginger Garlic paste – 1/2 teaspoon
Quinoa – 1/2 cup
Pomegranate – 1 tablespoon
Water – 1 Cup
Lemon Juice – 1 teaspoon
Coriander Leaves – 2 tablespoon

Method:
Wash Quinoa well.  If you don’t wash well it will give bitter taste
Peel the Avocado and mash it. Add Tomatoes, Onion, Pepper and Salt. Mix well. Add Lemon Juice and mix well. Mix in Coriander Leaves and mix well

Heat the water and add pinch of salt. Add Ginger Garlic paste mix well. When boil add Quinoa and cook it. When it is cooked use the fork and fluff it.

Add in Avocado to the cooked quinoa. Mix well.

Garnish with pomegranate seeds. Enjoy it

    Firstly, I its so beautiful, the green shades with the little ruby like pomegranate seeds on top. We seldom eat quinoa, basically rice is what we eat mostly. That said, we sure welcome such a fabulous quinoa, flavored with avocado.
