My kids love Chinese and Indian fusion dishes. They also love it if it is with less spices. Pepper is one of their favourite spice. I normally use baby corn in my salads. But the other day I saw this recipe in one TV show. But I forgot to note it down immediately. So I made my own mix. This dish is so simple and you can do it under 20 mins. Perfect side dish for fried rice
Ingredients:
Baby corn – 20 Corns
Spring onion (green part) – 1/4 cup
Spring onion (white part) – 1 tablespoon
Oil – 2 teaspoon
Mustard seeds – 1/4 teaspoon
Curry leaves – 10
Urad dhal – 1/2 teaspoon
Pepper powder – 1 teaspoon (adjust to your spice level)
Soya sauce – 1/2 teaspoon
Tomato sauce – 1 teaspoon
Garlic – 5 pods (chopped finely)
Ginger – 1/2 inch (chopped finely) or Ginger Juice – 1 teaspoon ( I have used Ginger Juice)
Method:
Clean and slice them in desired shape. Heat oil in a pan. Add mustard seeds let it pop. Add Urad dhal and curry leaves. Fry till urad dhal is brown in color. Add Ginger and garlic. Fry till garlic is brown in color. Add White part of onion and fry for 2 min.
Add Baby corn and add soya sauce, Ginger Juice (if using).
Close it with lid and cook the Corn. Add tomato sauce and pepper powder. Mix well. Cook it completely.
Add green part of spring onion and mix well.
Serve hot
