Badam Puri is done with Almonds, Maida, and sugar as the main ingredients. It is one of the simpler sweet even beginners can give it a try. This is a traditional sweet from Karnataka taste is closer to badusha or balushahi . It is also quite close to kaja / Kaja. I wanted to try this for previous Diwali but was keep getting postponed our family is so picky on Indian sweet. Since it is Festival time I wanted to post a few sweet recipes. So For this year Diwali, I managed to try this. Here you go with the recipe
Ingredients
Maida – 1 cup
Almonds – 12 (soak it in hot water for 1 hr)
baking powder – 1/4 teaspoon
Ghee – 2 tablespoon
salt a pinch
Sugar – 1 teaspoon
Milk – 4 tablespoons
Sugar – 3/4 cup
Water – 1/4 cup
Lemon juice – few drops
Cardamom powder – 1/4 teaspoon
Rice flour as needed
Ghee as needed
Method:
Peel the outer skin of Almonds. Grind with milk to a fine paste
In a bowl take flour, salt, 1 teaspoon of sugar, baking powder. Mix well. Add 2 tablespoons of Ghee. mix well. The flour will be moist. Now add the grounded paste and required water mix well
Make a smooth dough. Keep it aside for 15 mins. Make small size ball
In a bowl take sugar, water let it boil. Boil till 1 string consistency. Add cardamom, few drops of lemon, and mix well. Keep it aside
Take the flour dough make a slightly thick puri apply ghee and sprinkle rice flour
Fold like a half-moon and fold again to form a triangle. Gently roll. Keep it aside. Repeat. Heat oil for deep frying. Place the rolled puri and let it cook turn it over. cook till all sides are done
Remove it from Oil. Place it in kitchen tissue for a few mins. Repeat till all puris done
Place this in Sugar syrup and let it soak till all sides are coated with sugar syrup (15-20 mins)
Remove from syrup arrange it on a plate and sprinkle with nuts/saffron and serve
